A Capsicumel mead is a mead with chili as the main flavor ingredient aside from the honey.
The pepper spiciness(capsicum) can vary with the intended strength of the brewer, but should preferably balance and complement the honey
As with any mead, the honey sweetness will also vary according to the brewer’s intentions. We find Capsicumels with sweetness ranging from dry, semi-sweet and all up to the sweeter meads.
While many prefer the capsicumel to be a still type mead, there is nothing that would prevent a brewer to make this mead sparkly, or even petillant ( low carbonated)
